Known for their acumen of transporting guests through immersive creative experiences, Mauricio Couturier and Abe Aguilar, the Mexican-American designers behind Little Italy’s homage to Parisian joie de vivre, Wolfie’s Carousel Barhave chosen Rez Guzman as the new executive chef of the restaurant and bar.
Timeless French classics will continue to be served alongside the rotating centrepiece, with bright and bold additions and a new weekend brunch service on the horizon in mid-April.
About Chef Rez
Raised in the Philippines and informed by a culture where sharing a meal is often seen as a central aspect of home and family life, Chef Rez brings with him a reverence for the foundations of the culinary arts. Previously at Amaya at the Fairmont Grand Del Mar and more recently at Michelin Little FrenchChef Rez’s training is rooted in the techniques of French cuisine, which are both delicate and impart rich, bold flavors of fresh herbs, butter and sauces.
New dinner menu highlights include:
- Snails Gratinated de Luxe: snails braised in red wine and butter in a Comté cheese gratin
- Provençal-style fish en papillote: striped bass from Ensenada served parchment with Provençal tomato-fennel jam
- Grilled Cheese Caviar made with Paddlefish caviar, emmentaled and stacked on fresh brioche bread
And as they say, “let them eat cake” or “do as the French do”. Either way, guests can start or end the meal with Chef Rez’s dessert platter, a sweet treat platter with dark chocolate ganache pie, donuts, and a royal sundae with the addition of cotton candy. à papa maison, all served with a chilled glass of champagne.
Classic libations revisited
There are also several new libations from the bar – many that lean towards the classics but with some modern twists:
- Beautiful Girl (vodka / Lillet / cucumber / Prosecco)
- Lé Bardot (gin / apricot / strawberry / egg white)
- Oaxaca affair (mezcal / gin / Cocchi Americano / pear / orange)
